A sweat treat that isn’t a cheat!

Protein Peanut Butter Balls

Ingredients:

  • 4 scoops of chocolate protein powder
  • 6 heaping tablespoons of organic peanut butter (or almond butter)
  • 2 pitted dates
  • 1 heaping tablespoon of shredded coconut
  • 1 teaspoon of honey
  • 1 tablespoon of chai seeds

Instructions:

First place 2 out of 4 of the protein powder scoops and all the other ingredients into a food processor and blend for 1 minute. If the mixture is too thick you may add a few tablespoons of water and blend to a creamer consistency. Next, take a freezer safe, non-toxic container (9×11, 1- 1 ½ inch deep BPA free Tupperware container is recommended) and spread 1 scoop of the protein powder as a base across the container. Take 1 tablespoon of the peanut butter mixture out of the food processor and roll it into a ball and gently push onto the layer of protein powder. Repeat this until you have a row of 8 peanut butter circles in the container. Then sprinkle the other 1 scoop of protein powder on top of the peanut butter balls. Then using your hands pat the powder into the peanut butter ball. If desired you can add a few more sprinkles of shredded coconut on top and press that in gently as well. Put into freezer and chill for a minimum of 2 hours. Can be eaten chilled or frozen.
